Tasty Mini Pizza Quinoa Bites

These tasty little bites have to be one of my favourite recipes yet. They are really quick to make and full of flavour! I like to make a big batch on the weekend and freeze them for an easy meal served with salad or as snacks on the go. Quinoa is one of the most protein rich foods we can eat and contains twice as much fibre as other grains, meaning these bites are an excellent source of nutrients.

 

Ingredients:

2 cups cooked quinoa

2 large eggs

1 cup chopped onion

1 cup shredded mozzarella

2 tsps crushed garlic

1/2 cup fresh basil chopped

1 cup chopped pepperoni

1/2 tsp seasoning salt

Feta cheese – diced

1 tsp paprika

1 tsp oregano

pizza sauce for dipping

 

Instructions:

1. Preheat oven to 150 degrees Celsius.

2. In a bowl, mix together all the ingredients except for the pizza sauce.

3. Place into greased muffin tins and press down gently to compact.

4. Bake for 15 – 20 minutes.
